Method

  1. Melt the chocolate in a heatproof bowl set over a pan of gently simmering water, stirring occasionally until just melted. Remove from the heat and let it cool for about 10 minutes. You want it warm, not hot, before the eggs go in.

  2. Stir the olive oil through the cooled chocolate until smooth and glossy. Set aside while you work on the eggs.

  3. Whisk the egg whites with a small pinch of salt in a very clean bowl until firm peaks form. They should hold their shape when you lift the whisk. This is what gives the mousse its lightness, so take your time with it.

  4. In a separate bowl, whisk the egg yolks until slightly pale and thickened. Fold in the chocolate mixture until combined.

  5. Add a third of the egg whites to the chocolate mixture and fold through to loosen it. Then gently fold in the remaining whites in two additions, keeping as much air in as you can. Stop as soon as no white streaks remain.

  6. Spoon into four small glasses or ramekins and refrigerate for at least one hour.

  7. Just before serving, add a pinch of flaky sea salt and a few raspberries if you have them. It will look beautiful. You will feel very pleased with yourself.

Prefer to skip the raw eggs? Fold the chocolate and olive oil mixture through 200ml of softly whipped cream instead. Different texture, equally good, no egg whites required.
